Some people say cucumbers taste better pickled so why not try this unique take on traditional cucumber tzatziki. Traditional tzatziki includes cucumbers, dill, and an acid, lemon juice. Pickles are not far off with cucumbers, dill, and an acid, vinegar. The additional honey tames the extreme vinegar taste while adding a hint of sweetness. If you like pickles, then why not try this pickled cucumber tzatziki?

- Yields: 2-2 1/2 Cups of Dip
Directions
1Cut pickles in half. Use a spoon to scoop out the inner part (the seeds and goo).

3Slice pickles thinly and place on a paper towel.

5Top with another paper towel and let sit (in the fridge) for 1-2 hours.

7In a mixing bowl, combine pickles, Greek yogurt, honey, pickle juice, pepper, and onions (if you're with non-picky eaters...ahem).

9Cover and let sit (in the fridge) for at least 1 hour (the longer the better).

11Serve with fresh pita, pita chips, or veggies.
