This salad with beets may not appeal to everyone, but since I was a kid, I have had an affinity for beets. I'm still not sure where it came from since my parents have always hated them. Either way, I love them canned, pickled, roasted, you name it. I usually make this salad with beets, oranges, and goat cheese as an easy and healthy weekday lunch (my boyfriend hates beets as well so dinner is a no go...). With just a couple easy steps, you'll have a nutritious meal on your plate within minutes.

2 tbsp Your Fave Dressing (I recommend one with sesame...)

Directions

1Rinse and dry arugula. Toss with dressing (*I use a large tupperware to shake up the lettuce and dressing for salads).
